I have microphone cable consisting of two conductors and a shield (CMK 222). When making a RCA to RCA cable, what should I do with the extra conductor? Combine conductors as a single signal or ground it somehow? Or would there be any benefit making a RCA to XLR cable instead (with the cold signal grounded as advised)? My source has only unbalanced output. The speakers would be G series, maybe G Three.

Just look at the first example. It is exactly like that but you just connect RCA connectors to both ends.
