In a stereo setup would there be a an considerable audio difference by replacing the 5040 with the 7040 in combination with the 8020's ?
I'm aware of the RCA to XLR cable changeover necessary.

Those attributes are mostly related to the room acoustics more than the subwoofer itself. I would recommend to investigate about the possibility to add bass traps and other type of acoustic material inside the room to improve the sound quality.
